Insalata Caprese - the classic mozzarella & tomato salad

Insalata caprese contains the colours of the Italian flag – red, white and green.

It is simply mozzarella and tomatoes, with some torn basil leaves.

Mozzarella is quite a bland, slightly rubbery, white cheese, which should always be eaten as fresh as possible. It is made from cow’s or buffalo’s milk. The one made from buffalo’s milk is superior.

These ingredients should serve 4 as a starter.

  • 175 g (6oz) mozzarella cheese
  • 300 g (10oz) firm, ripe tomatoes
  • salt and black pepper
  • a bunch of basil
  • at least 4 tablespoons of extra virgin olive oil

Slice the cheese and tomatoes and arrange in overlapping, alternate, slices on a serving plate. Season with a little salt and lots of freshly ground, black pepper. Tear the basil leaves into pieces and sprinkle over the salad.

Finally, sprinkle the olive oil all over the salad.

If the ingredients are served straight from the fridge, the salad will not have much taste. Serve at room temperature – or, preferably, outside in the sun!
